Pumpkin Seed cake

If you would like to change from the usual cream cakes, banana breads, or other, why not try something different and crunchy and soft at the same time.

Not only will the pumpkin seeds provide you with plenty of energy and other super health benefits, but it also tastes delicious!

Ingredients

  • 200 g sugar
  • 1 pack vanilla sugar
  • 4 eggs (separated)
  • 125 ml neutral oil (ex: sunflower)
  • 25 ml of pumpkin seed oil
  • 260g grated apples
  • 150g pumpkin seeds toasted and crushed
  • 150g plain flour
  • 50g pumpkin seed flour
  • 1 pack baking powder
  • 2 tablespoons pumpkin seed mousse/cream (a bit like peanut butter)

    Icing

  • 80 g sugar
  • 2 tablespoons of water
  • 2 tablespoons of lemon juice
  • 1.5 tablespoon pumpkin seed mousse

Preparation

  1. In a big bowl mix together the egg yolks, sugar, oils, vanilla sugar until well creamy
  2. Beat the egg whites and fold in 3/4 of them into the big bowl
  3. Add the flour, baking powder and pumpkin seeds into the big bowl and mix well
  4. add the pumpkin seed mousse and the rest of the egg whites
  5. Butter your baking dish and sprinkle some flour on it, then pour the mixture into it
  6. Place in a pre-heated oven at 150 C for 45 min to 1 hour (keep an eye on it)
  7. Prepare the glazing by mixing all ingredients together thoroughly
  8. let the cake cool down, then add the glaze and a few sprinkles of crushed pumpkin seeds
